Nugget vs Bullet vs Cube vs Gourmet Ice: Density, Melt Rate and Cost Compared

Nugget ice chills fastest and dilutes hardest — roughly 14–18% added volume in ten minutes against 5–8% for a full cube. Bullet ice is cheapest to make and to buy but its hollow core gives it the worst mass-per-glass of any type. The choice is really a trade between how fast you want cold and how long you want the drink to survive.

Pick your ice by surface-area-to-mass ratio and everything else follows. Nugget ice has the most surface per pound of any type a home machine makes, so it chills a warm drink in under a minute and dilutes it into water in about twenty. A clear full cube sits at the opposite end: slow to cool, and still recognisably a cube ninety minutes later.

Everything people argue about — chewability, presentation, how long a drink lasts — is downstream of that one ratio. The tables below give it to you as measurable numbers, plus the two costs that decide whether a type is worth a dedicated machine: water per pound and kilowatt-hours per pound.

One thing to settle up front. A hollow bullet cube is not a defect. Bullet machines freeze ice onto chilled prongs dipped in a water bath, and the ice grows outward around the prong, so a cavity where the prong was is the design working.

  1. How the six types are actually made

    • Nugget / pellet — water freezes as a thin sheet on the inside of a chilled cylinder, a rotating auger scrapes it off and compresses the flakes through a die. Soft, porous, full of trapped water.
    • Bullet / tube — chilled prongs dip into a recirculating water bath. Fast, cheap, hollow-cored, and the reason nearly every $90–$220 countertop machine makes this shape.
    • Half cube — sprayed or flooded over a segmented grid, harvested by a hot-gas reversal. Standard on undercounter machines and on dispensers.
    • Full cube — same process, bigger cells. Also what a refrigerator freezer module makes, in its own crescent variant.
    • Clear gourmet — water is frozen slowly and directionally so dissolved air and minerals get pushed ahead of the ice front instead of trapped in it. Slow cycles, and usually some purged water.
    • Flake — the same auger machine as nugget, without the compression die. Rare in a home, common where things need packing in cold.

    Note what that list implies: nugget and flake come off the same architecture, and clear ice is not a water-quality achievement. It's a freezing-direction achievement. Distilled water in a bullet machine still makes cloudy bullets.

    Read the melt and dilution columns together with how you actually drink. If your glass is empty in twenty minutes, the slow-melt columns are worth nothing to you and you should optimise for cost per pound instead.
  3. Nugget costs more than the sticker suggests

    The purchase price gap is obvious — a nugget countertop machine runs three to five times a bullet machine. The running gap is less obvious and it's the one that annoys people six months in.

    An auger machine is grinding a metal screw against a chilled cylinder wall for every pound it makes, so it draws more power per pound (0.15–0.22 kWh against 0.10–0.15) and it's far less tolerant of scale. Mineral film on the evaporator cylinder is what jams augers, and hard-water owners who skip descaling for two months get to find that out. Nugget machines also want a cleaning cycle every one to two weeks, not every month.

    Is it worth it? If you actually chew ice, yes, and nothing else substitutes — no other type is soft enough. If you're buying nugget because it looks appealing in videos and you mostly drink water at a desk, you'll be irritated by the maintenance within a season. Buy the bullet machine.

  4. Clear ice is a direction problem, not a water problem

    Cloudiness is trapped air and precipitated minerals. When water freezes from all sides at once, the dissolved gas has nowhere to go and gets locked in the middle as a white core. Freeze it slowly from one direction and the front pushes the impurities ahead of itself, out of the finished cube.

    That's why a machine that makes clear ice makes it slowly — 18 to 30 minutes a cycle against 8 to 13 for a bullet machine — and why it uses noticeably more water. Many of them purge the last, most concentrated portion of each batch rather than freeze it, which is where the 0.22–0.40 gallons per pound comes from.

    So: filtering your water will improve taste and reduce scale. It will not make a bullet machine produce clear ice, and any page telling you otherwise is guessing.

    Cross-reference this against the ice type you picked above. If your chosen type only exists in a class that needs a drain and you have no drain, change your ice type rather than your plumbing.
  6. The ranking, stated plainly

    For most households, bullet ice on a 26 lb countertop machine is the correct answer and everyone who tells you otherwise is selling something. It's the cheapest per pound to buy and to run, it recovers fastest, and the fast melt genuinely does not matter in a glass you finish in fifteen minutes.

    Nugget earns its price only if someone in the house chews ice. That's it. That's the whole case, and it's a completely sufficient case if it applies to you.

    Clear gourmet is worth the slow cycle if you drink spirits slowly or you're serving guests, and it's a waste of money in a house that fills water bottles. Half cube is undercounter territory, so you're really choosing a plumbing project, not an ice type. Flake at home is a solution to a problem homes don't have.

    And if your existing machine simply isn't producing what it used to, ice type isn't your issue — output measurement is. Weigh 24 hours of production and compare it against nameplate before you shop.
